Healthy Taco Cups for Toddlers

Ingredients
  

  • 1 lb Ground Turkey
  • 1 Bell Pepper (diced)
  • 1 packet Taco Seasoning
  • 4 Tortillas (taco size)
  • 2 cups Shredded Cheddar Cheese
  • Sour Cream
  • Salsa
  • Other Taco Toppings (olives, avocado, lettuce, etc.)

Instructions
 

  • Preheat oven to 350℉. Grease a 12-cup muffin pan.
  • Heat a large saute pan over medium heat with some olive oil. Once the oil is hot, add the ground turkey and peppers. Break up the meat and cook until browned and cooked through. Add in the taco seasoning and one Tbsp water.
  • Meanwhile, cut each tortilla into 6 even wedges. Lay two wedges facing each other into each muffin cup to cover the entire cup.
  • Add a little cheese to each cup, this helps to hold the tortillas together. Fill with the meat and pepper mixture and top with more cheese.
  • Bake for 15 minutes or until desired crispiness is achieved.
  • Top with sour cream, salsa and any other toppings you’d like.
