Healthy Sweet and Sour Chicken

Ingredients
  

  • 1 lb Popcorn Chicken (Just Bare chicken bites are my personal favorite, or homemade for the healthiest option!)
  • 1 20 oz. can Pineapple Chunks
  • ¼ cup Apple Cider Vinegar
  • 2 Tbsp Ketchup
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • 2 Bell Peppers, diced
  • ½ Sweet Onion, diced
  • 3 cups Cooked Rice

Method
 

  1. Cook the chicken bites as directed on the packaging. I highly recommend cooking them in the air fryer!
  2. In a large sauté pan, heat the olive oil over medium heat and add the peppers and onions. Cook for about 5 minutes or until soft.
  3. Meanwhile, drain the pineapple juice from the canned pineapples into a glass measuring cup. Add the vinegar, ketchup and soy sauce and stir to combine.
  4. Add the sauce to the pan and simmer until the sauce thickens.
  5. Once chicken is ready, add in chicken and pineapples. Heat for about a minute and then serve over rice!
