Cut chicken into large chunks. Place into a gallon sized ziploc bag or other airtight container. Add Greek dressing and shake so all of the chicken is covered. Place in the fridge for at least an hour, or up to overnight.
Cut the onion, bell pepper, zucchini and squash into large chunks.
Build the kebabs by placing a variety of chicken and veggies on each stick.
Preheat the grill. Place kebabs on the grill and cook for 10-15 minutes or until the internal temperature of the chicken reaches at least 165°. Flip halfway through.
Serve with rice, couscous, Greek salad, or anything else you’d like!
