Easy Spinach Protein Waffles

Ingredients
  

  • 1 cup Kodiak Flapjack Mix Can use other pancake mix, there will just not be as much protein
  • 1 cup Spinach Fresh or frozen (thawed if frozen)
  • 3/4 cup Milk Dairy or non-dairy
  • 1 tbsp oil
  • 1 cup Whole Milk Yogurt (Optional)
  • 1 cup Berries

Method
 

  1. If using frozen spinach, thaw it in the microwave first.
  2. Add the spinach and milk to a blender and blend until smooth.
  3. in a medium bowl, add blended spinach, flapjack mix and oil.
  4. mix until combined. Then heat up waffle iron.
  5. Add 1/3 of waffle mix to the waffle iron and cook until as iron directs, about 1-2 minutes. Repeat with remaining mix.
  6. Top with yogurt, berries, or whatever toppings you prefer!
