Tacos are on a constant rotation in our house since they are relatively healthy, inexpensive and super easy to make. Plus, they’re delicious and super customizable! But our toddler struggled to eat them since holding the tortilla and taking a bite without all of the filling falling out was nearly impossible. I’d make it into a little burrito for her and she’d end up just eating around the edges and not actually eating much of the meat or fillings. So since she does great with muffins, I decided to put them into a muffin tin, and these healthy taco cups for toddlers were an instant hit.
And honestly, My husband and I ended up loving them just as much. They were SO good and the tortillas got just crispy enough to have the most incredible texture. They’re easy to eat and all the fillings you like just sit on top!

Ingredients Needed for Taco Cups
Ground Turkey: To keep these as healthy as possible for your toddler and family, use lean ground turkey or ground chicken. Ground beef is also an option just not as “healthy” of a choice.
Bell Pepper: Any color works great. I used half a red and half a yellow since I had both and thought it looked nicer!
Taco Seasoning: Pre-made packets or homemade both work great!
Tortillas: For the healthiest choice, go with whole wheat tortillas! Since they crisp up nicely in this recipe, you won’t mind this swap. But I had white tortillas on hand already so I just used those.
Cheddar Cheese: Full fat shredded cheddar is best here for all of the great fats your toddler needs!
Sour Cream: Optional! And again, full fats here are best for a young toddler’s brain growth.
Salsa: Optional topping or filling in these taco cups.
Other Taco Toppings: Anything you’d like to add is great! Some ideas include avocados or guac, black olives and lettuce.
